An eclectic blend of Vermentino, Pinot Gris & Fiano aiming for the perfect balance of texture, complexity, and freshness.
We split this into two parts and fermented separately. The first part was destemmed, gently pressed and fermented in foudre, the second was fermented on skins for 10-18 days. While the wine was naturally fermenting in the foudre we introduced Pinot Gris, Riesling, Chardonnay & Pinot Noir juice at different stages as a way of increasing texture and complexity while maintaining fruit vibrancy.
